Homemade Veggie Burger
I made these veggie burgers today, and they turned out delicious. The sweet of the beets and veggies balanced perfectly with the salt of the seasonings.
I used this recipe as a base, but added beets to give it the color of an actual burger. I used coconut flour to help it stick together and eye-balled the amounts of mushrooms and beets based on the size of the cauliflower. The one I had today was relatively small, so ended up using 4 large mushrooms, and one small beet (a little smaller than the size of my fist). Then, I sprayed the patties with a light coat of avocado oil before putting them in the oven to bake.
I love that they're a guilt-free patty and basically ate it as today's veggie servings. Looking forward to making them again!
